Signature Banana Bread
A wholesome loaf packed with banana, chia seeds, and crunchy walnuts, perfect for a nourishing snack.
Ingredients
Topping
1 banana, sliced lengthways
1 tsp cinnamon
Wet Ingredients
3 overly ripe bananas, mashed
2 eggs
¼ cup milk
3 tbsp coconut oil, melted
1 tsp vanilla extract
3 tbsp maple syrup
¼ cup chia seeds
Dry Ingredients
1 cup almond meal
½ cup LSA mix (or ground flaxseeds)
1½ tsp baking powder
1 tsp cinnamon
4 Medjool dates, pitted and chopped
¼ cup walnuts, crushed
Instructions
Preheat your oven to 160°C (320°F) and line a loaf tin with baking paper.
In a large mixing bowl, combine dry ingredients
Stir well to combine.
Prepare the wet ingredients in a separate bowl or blender, mix together mashed bananas, eggs, almond milk, melted coconut oil, vanilla extract, maple syrup, and chia seeds until smooth.
Slowly add the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
Spoon the batter into the prepared loaf tin
Lay the sliced banana on top and sprinkle with cinnamon.
Bake for 45–60 minutes or until golden and a skewer inserted into the center comes out clean.
Let the loaf cool in the tin before turning it out. Once cooled, slice and enjoy.
Store in an airtight container for 3–4 days
