Signature Banana Bread

A wholesome loaf packed with banana, chia seeds, and crunchy walnuts, perfect for a nourishing snack.

Ingredients

Topping

1 banana, sliced lengthways

1 tsp cinnamon

Wet Ingredients

3 overly ripe bananas, mashed

2 eggs

¼ cup milk

3 tbsp coconut oil, melted

1 tsp vanilla extract

3 tbsp maple syrup

¼ cup chia seeds

Dry Ingredients

1 cup almond meal

½ cup LSA mix (or ground flaxseeds)

1½ tsp baking powder

1 tsp cinnamon

4 Medjool dates, pitted and chopped

¼ cup walnuts, crushed

Instructions

  • Preheat your oven to 160°C (320°F) and line a loaf tin with baking paper.

  • In a large mixing bowl, combine dry ingredients

  • Stir well to combine.

  • Prepare the wet ingredients in a separate bowl or blender, mix together mashed bananas, eggs, almond milk, melted coconut oil, vanilla extract, maple syrup, and chia seeds until smooth.

  • Slowly add the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

  • Spoon the batter into the prepared loaf tin

  • Lay the sliced banana on top and sprinkle with cinnamon.

  • Bake for 45–60 minutes or until golden and a skewer inserted into the center comes out clean.

  • Let the loaf cool in the tin before turning it out. Once cooled, slice and enjoy.

  • Store in an airtight container for 3–4 days

  • Freeze slices for up to 1 month
