Got some hot cross buns left over?! I made this delicious
HOT CROSS BUN BAKED CHEESECAKE for Easter Monday
Ingredients:
6-8 hot cross buns
250g cream cheese
2 eggs
3/4 cup milk of choice
1/4 cup sugar
2 tsp vanilla extract
1/2 cup chocolate chips
icing sugar to serve
Method: Preheat oven to 180°C and grease a 38cm baking dish. In a blender add the cream cheese, eggs, sugar, milk and vanilla extract. Blend until smooth. Cut the hot cross buns in half and add to the baking tray. Sprinkle on chocolate chips and pour over the cheesecake mixture. Bake for 30-35 minutes or until golden. Dust with icing sugar and enjoy!
